Rhode Island Quahog Chowder

Ingredients: Serve 6

  • 1/8 pound salt pork, diced
  • 2 onions, sliced
  • 5 potatoes, diced
  • 1 quart boiling water
  • ½ pint quahogs, drained and cut small
  • Liquor from quahogs
  • Salt and pepper

Preparation:

Cook the salt pork until it browns, then add the onions and fry it until it becomes tender and yellow. Then add the potatoes and fry it for a little, but do not allow it to darken. Take the pork, onions, and potatoes and add to some boiling water. Cook until the potatoes have become tender, and add the quahogs. Then add the liquid from the quahogs ( to taste). Then season it and let it simmer for a bit. You are now ready to serve!

Great little recipe, reminds me of the Family guy show since its from “Quahog” ;-)
